Recipes

Baked Beans

Order: 1 refried beans (they will be pinto beans in tomato sauce), 1-2 ketchup packets, 1 brown sugar, 1-2 pepper packets.

Add ketchup, sugar, and pepper to the beans, to taste. Mix.


Spicy Asian Noodles

With chicken and carrots
Order: 1 plain spaghetti, 1 peanut butter, 1 soy sauce, 1 lemon juice, 1 honey, 2-3 hot sauce, 1 pepper packet, 1 scrambled egg, 1 broccoli, additional vegetables if desired, hot water, empty bowl.

Sauce: Put peanut butter in the bowl. Add soy sauce, 1/2 of the honey and 1 hot sauce. Stir and taste. Add honey and hot sauce to taste. Add hot water and stir until you reach the desired consistency.

Chop the scrambled egg. Put sauce and egg on the noodles. Mix. Add broccoli (and other vegetables, if desired) on top. Sprinkle with lemon juice and black pepper to taste.


Chicken, Bean, and Cheese Quesadillas

Assembled, not yet microwaved.

Order: grilled chicken breast, 2 pork and beans, 2 string cheese, 2 taco sauce, 2 corn or wheat tortillas, 1 sour cream (optional).

Slice the chicken into small strips. Shred the string cheese by hand. Cover half of each tortilla with chicken, beans, cheese, and taco sauce. Add half of the sour cream to each, if desired. Fold each tortilla over. Take the plate down to the nurse station and ask someone to microwave it for 30 seconds.









Chicken Stir Fry with Extra Vegetables

Order: stir fry (chicken with vegetables), broccoli, carrots, green beans.

Add extra vegetables to the stir fry. Mix.



Lemon Pepper Rice

Order: 1 white rice, 1 lemon packet, 1-2 pepper packets.

Add lemon, and pepper to taste. Mix.



Banana Cream Oatmeal (or Cream of Wheat)

Order: 1 oatmeal or cream of wheat, 1 banana, 1 vanilla ice cream, 1 brown sugar (optional).

Dice half of the banana. Add to the hot cereal and mix it in. Add 2 or 3 spoonfuls of ice cream. Optionally, sprinkle with brown sugar.











Mocha

Order: 1 coffee (regular or decaf), 1 packet hot chocolate (regular or sugar-free), 1 vanilla ice cream.

Mix the hot chocolate powder into the coffee. Stir. Add a spoonful or two of vanilla ice cream on top.

  1. Joe these look delicious, thanks for sharing! Once again you and Jan were my inspiration on my run today. When ever Craig and I get tried or just plain wimpy, we ask ourselves, what would Joe and Jan do. The answer is always to push forward with a positive attitude. We're following your blog religiously, and send warm (literally and figuratively, its 75 degrees here in Alabama) regards form the south lands. By the way our place down here is right across from an inlet called Pirates Cove, think you'd fit right in.

    Fabulous recipes. Wasn't Michelle Obama in Hospital Administration before she became the First lady? I know that she is an advocate for healthy eating and I think she would definitely be interested to know the great work you are doing at the hospital.

    Tonight, I think I'm going to whip up noodles with a spicy sweet peanut sauce. If it works out, I'll post the recipe.

  4. I didn't know you were a coffee drinker. Your mocha recipe is a variation on what I called Grad School Mocha - I used chocolate syrup, no icecream. Your current recipe is essentially the same as my TGIF coffee (always caffeinated!) - so we can add that to the list of things we share:

  6. Wow, Joe - I had no idea what a chef you've (had to) become. I hope you're not offended if I don't run down to U.of C. Med Center to join you for dinner! But if I do, I'll gladly pick up something you don't have to "doctor" in order to enjoy!

  7. The Spicy Asian Noodles were very good. Not spicy enough, but I'll adjust the recipe for next time. I might add some sliced chicken breast next time, too.

  8. Can you create Mollie Katzen's broccoli and tofu with spicy peanut sauce from hospital ingredients? If the hospital doesn't stock tofu, are you allowed to call Transport for a ride to the local food co-op? :-) Enough silliness from me. I am looking forward to a reunion with you and Jan in which we cook a fabulous vegetarian meal from scratch.
